Made this last week in lieu of challah for my vegan son. Following the instructions exactly, it was “fine”, but not nearly as fluffy and nicely risen as I would have liked. A little disappointed, frankly.

What can be used instead of chick peas? Many who are allergic to eggs and peanuts are also allergic to chick peas.

Flax and chia eggs: 1 Tbsp ground flax or chia mixed with 4 Tbsp water. This is my go-to for egg-free baking.
Applesauce: A great binder in baked goods and also allows you to replace some of the oil, if desired (though I highly recommend making friends with fats).
Would either of these work?

I prepared the dough as written this morning and plan to bake the loaves tomorrow. The dough itself came together beautifully. What a nice alternative bread and use of the aquafaba from one can of chickpeas!

While this might be a great bread, but it is not brioche by the very definition you gave. Please, please don't do this. There is no reason to plagiarize the name of a completely different well known bread. Let it stand on it's own as something new and delicious. There is so much disinformation going around, we don't need it in the food world.
