I like to make a sort of cream with chopped cooked asparagus, ricotta, and parmigiano. This makes a delicious filling for an omelette and with a little lemon zest and olive oil an easy but elegant pasta.

I came home yesterday to find a lug (20 lbs) of farm fresh asparagus waiting for me to devour it on my front porch! I couldn't be more happy! Love local asparagus!
