We've been waiting for this moment.

We've watched the days get lighter, felt the sun get warmer. We've been going to the farmers' market, eagerly grabbing (and gobbling) those hallmarks of spring: ramps, artichokes, and now, asparagus!

I like to make a sort of cream with chopped cooked asparagus, ricotta, and parmigiano. This makes a delicious filling for an omelette and with a little lemon zest and olive oil an easy but elegant pasta.

I came home yesterday to find a lug (20 lbs) of farm fresh asparagus waiting for me to devour it on my front porch! I couldn't be more happy! Love local asparagus!
