Halloween has passed, the election is over, and there's a serious chill in the air...Thanksgiving season is upon us! In preparation for the year's biggest food holiday, and in light of our most recent contest, this week's test kitchen turned into a turkey kitchen. Our team prepped, cooked, and ate a bevy of birds, all in the name of recipe testing. Turkey day may be a few weeks away, but the kitchen certainly felt like Thanksgiving -- down to the Food52 family coming together around Amanda's table. 1. A suspicious delivery. We needed a cleaver, which Nozlee proceeded to carry through Brooklyn Heights. No neighborhood pets were harmed in the making of this Instagram photo, we promise.
2. Back in action! Our test kitchen manager, Jennifer, was back in the kitchen after a knee injury kept her away from us for months. She put the cleaver -- and her upper body strength -- to good use.
3. More spatchcocking practice. When it comes to turkey, we practice what we preach: spatchcocking makes for a quick, evenly cooked turkey.
