A question about a recipe: Zucchini-Currant Scones

Fff0bcd2 cee3 4658 93c8 6bd27c2dfb76 p1060399

I have a question about the ingredient "grated zucchini, frozen in a single layer (I use the food processor with the grating disk - less wet than hand grater)" on the recipe "Zucchini-Currant Scones" from mrslarkin. I would like to sub carrots fo zucchini, can I skip freezing since they are not as watery?

Sure, that would work just fine! What you've got there is a Carrot Cake Scone!! Sometimes I use orange zest when I go carrot.
