I like to mix up the flavors and textures, so for example, use Granny's, Goldens, and Macs. Also, if you mix the apples separately and layer them into the pie, you'll get a nice contrast of the three. It's an extra step, but fun and delicious!

FYI, there's a new book out called "The Apple Lover's Cookbook" by Amy Traverso. It's like a two-fer, a cookbook and an apple biography! It's like an everything-you-ever-wanted-to-know-about-apples book! OK, can you tell I like this book??

My mother would swear quite tart only. But I like Greenstuff's answer.

It depends on where you live and what time of year it is. Lots of people try for more than one variety so that they (hopefully) end up with a mix of apples that keep their shape vs. those that go to mush and tart vs. sweet.

I use a combination of Pippins and Gravensteins. Provides a nice balance of apple flavor and perfume.

I like macoun because they hold their shape and are a little tart. Granny smith if you like a very tart pie.
