How long and at what temp should I cook a 5 lb rib roast at 7000 feet?

I'd recommend the same thing -- your roast may take a little longer to reach temperature (use a meat thermometer to test), but I wouldn't recommend using higher heat.

I'd just follow the sea-level recipe. I live at 7300 feet and the only recipes I modify are for baked goods where the amounts of leavening are critical.
