any good recipes for leftover baked ham

So it's not gourmet, but this is an example of the whole being greater than the sum of its parts. My mom and grandma always made these with leftover ham, and now we do too. Get some sandwich buns (i usually use hamburger rolls, wheat works fine). Chop the ham up really finely (I usually do a couple of pulses in my food processor). add some cheese, again finely chopped (whatever you have in the medium/hard cheese category seems to work best -- I usually do this with cheddar, but I've also used gouda and provolone and my mom and grandma used to use American cheese -- the deli sliced kind). Stir in a little mayo (light is fine), a little mustard (whole grain or dijon seems to work best), and either some relish or chopped up pickles, or even Spanish olives in a pinch. Spread the mixture on the rolls -- as much or as little as you like, use as many rolls as you have ham mixture for -- these freeze really well. Wrap them in foil and put them in a preheated 350 oven for about 30 minutes. The rolls should be nice and toasty on the outside and the cheese should be melted on the inside. Enjoy! PS -- I usually freeze them uncooked and then just pop them in the oven. They take a little longer but come out fine.

We'll it's not exactly a recipe, but my favorite thing is to make a great big, mustard-y sandwich! And of course, throw the ham hock (and as much of the meat as you like) into split pea soup!
