Hi! I soaked my cannellini beans overnight. Once I drain them how long can they sit before I cook them?

Refrigerate, in the soaking water. If you leave them out they may start to ferment. For more than a few days, you could freeze them.

If you don't want to cook them right away, add more water.

I would cook them immediately, otherwise they will dry out & you will not be able to re-hydrate them.
