Soaked Rhubarb overnight in water

Yes. Nothing wrong with it. It just curled from soaking in water. I don’t know the exact science. Something to do with the fibers in rhubarb. My Viet mother use to do this with celery and other fibrous greens for a more pleasing presentation.
