You can grate and saute them, I saw Mark Bittman do it on his show 'The Minimalist'. I have cooked cubes in simmering water for 5 minutes, then fried with onion for 5 minutes more. They are so delicious baked, though, can't wait to try microwaving them.
pretty often i whip up a fritatta for dinner. it varies in its ingredients, but just the other night i decided to make one with sweet potato and fennel. i was AMAZED (and i think i've felt this before with regard sauteing a sweet potato) that the peeled, cubed (about 1/2 inch cubes) sweet potato was soft and cooked in what seemed like about 5 minutes. possibly a minute or 2 longer, but still. seasoned with s+p plus a little celery seed i could have eaten it just like that.

To add to Mrs Larkin's response, I wrap it in plastic wrap, which creates steam and keeps the potato moist. You can also now buy these in the supermarket already prepared this way.
Place potato, poked with the tines of a fork a few times, in microwave and cook on full power for a few minutes, depending on size of potato. For average-size potato, about 5 minutes. Turn potato over at midpoint of cooking time.
