How would I change the recipe to use either brown jasmine or brown long grain rice?

Since you cook the rice separately from the other ingredients and then just combine them to serve, you would cook the brown jasmine or long grain rice according to the package directions (if you don't have a package, I'd estimate 45 minutes on the stove over medium heat, with 10-minute rest still covered, off the heat) and follow the remaining instructions as written.
