What's for dinner?
I'm having an enchillada casserole with layers of tortillas, chicken, cheese and a green tomatillo sauce. I made two once and froze this one for when I didn't want to cook.
Hey, we had enchiladas tonight, too. Creamy chicken/rice/bean enchiladas with green chilies. When I was putting it together, I considered making it lasagna-style.. might try that next time.
I'd much rather have enchiladas, but I'm having shaved Brussels sprout salad and minestrone. #meatlessmonday
