I've got 1/2 a rotisserie chicken in the fridge....dinner ideas?

Thanks to everyone for their ideas! In the end, I shredded the chicken and heated it with hot sauce. I spooned that into soft tortillas along with raw pepper and romaine lettuce, and a little feta cheese. Served it all alongside black bean-and-onion rice, and some tomato salsa.

Tortilla soup: Heat olive oil in a stock pot and add diced onion. When starting to brown, add minced garlic. Turn down the heat and add low sodium chicken broth. Add shredded chicken, diced potatoes, sliced jalapenos, corn, beans, and any other vegetable you want to add. Flavor with a bay leaf. Heat until potatoes are easily pierced with a fork. Just before serving, add chunks of fresh tomatoes. To serve, garnish with strips of crunchy tostados, chopped fresh cilantro, lime wedges, and a mild cheese, such as queso blanco. This is real comfort food.

My mom used to cut leftover roast or rotisserie chicken into pieces and reheat them in a sauce she made of equal parts bottled chili sauce, and grape jelly, with about 1/2 cup red wine added. She'd simmer the sauce for about 10-15 minutes, then add the chicken and cover and simmer. I've never done that, but I have to say it was really tasty.

Curried chicken salad. I don't really like the taste of reheated chicken, so I go for something cold. Mayo, some curry powder (bloomed in a little oil?), toasted cashews, grapes and maybe some red onion. Eat that with some crackers and salad greens!!

I just did an improvised chicken pasta when 3 men unexpectedly invited themselves to dinner at 6pm and all I had was some rotisserie chicken, the contents of my pantry, and about 30 minutes. I just carmelized some onion and garlic in olive oil, added half a jar of Trader Joe's olive tapenade and let it simmer a minute, then threw in a few handfuls of pre-chopped kale and let it simmer with the top on for 2 minutes. In went the shredded chicken, then the penne, then a little grated parmesan. It sounds weird but was strangely delicious. I liked the olive, chicken combo. When uninvited guests show up, a little pre-cooked chicken in the fridge is a miracle ;) Just look in your pantry and improvise.

That doesn't sound weird at all. Sounds good! Actually, Claudia Roden has a recipe along similar lines - have to admit I've made it (or variations, switching up herbs, adding caramelized onion when I had no currants, etc.) many times using a store bought rotisserie chicken.

Pasta! Make a simple sauce by melting 1 T butter in a pan then stirring in 1 T flour until incorporated. Add 1 C milk or cream and stir as the liquid boils and becomes a thick sauce. Toss in chopped chicken, some cooked veggies, and as much Parmesan cheese as you want and warm it all up. Season to taste. Pour over your favorite cooked pasta. Enjoy!

Burritos or enchiladas are always my leftover chicken go-to. Or a cold sesame noodle salad with chicken shredded on top/mixed in.

Yes! You'll need: Small Flour Tortillas, sesame oil, Hoisin sauce, sesame oil, green onions.

Cut up the chicken and place skin side up, brush with hoisin sauce and broil (don't walk away it can burn quickly, just crisp up the skin).
Brush two tortillas with sesame oil. Place 'face to face' repeat as needed in pairs---cover with a wet paper towel and warm in the microwave.
Chop up the green onions.
Serve chicken with some of the skin on the tortillas with more hoisin sauce and the green onions.
(think mock peaking duck).

Round it out with some rice, and egg rolls or Asian slaw.
