Or, for a different twist -- boil quail eggs (just two minutes, you want them soft-boiled). Chop some fresh salmon very fine, season with chives, dill and parsley, beat in an egg, and use it to wrap the quail eggs. Dredge in flour, dip in an egg wash, coat in breadcrumbs, deep fry.

1. Boil eggs 2. wrap the cooked, cooled eggs in sausage meat.
3.then roll then in beaten egg , then in bread crumbs.
4. bake till golden.
