Splitting a recipe in half.

I want to half @jenniferperillo's chocolate chip cookie: http://www.injennieskitchen.com/2010/03/chocolate-chip-cookies.html, and it calls for 3 eggs, is it better to side on using one egg or two?

I think I would just make the whole recipe and then freeze half the dough for another time.
