A question about a recipe: Hervé This' Chocolate Mousse

I have a question about the recipe "Hervé This' Chocolate Mousse" from Genius Recipes.
I used very bittersweet chocolate. It was too bitter & intense: can we use another kind of chocolate or add sugar at some point? At what point would you add the sugar?
