My recipe calls for frying capers til they blossom in about 5 inches of canola oil. About how long will that take and how do I dry them completely?

Blot them dry on a paper towel. They should not take long to fry, maybe 3 minutes? But I don't think the capers will do an enormous amount of "blossoming," they just open up a little bit. Yum, fried capers!
