Can this recipe be doubled? I'm thinking it would be very nice for a brunch I'm hosting this weekend. ;o)

Yes. Basically any recipe can be doubled - you just need to adjust pan sizes and baking times accordingly, and may want to watch doubling of certain strong herbs like bay leaves or cinnamon sticks.
In this case I wouldn't worry about it - increase as needed and bake until set.
