I normally do the All Purpose Flour, butter/or fat, and whatever liquid you use----milk or stock. Using a whisk to incorporate well.
Wondra Flour is good alternative to AP flour for gravies, it incorporates very well and doesn't clump as much, you still need to whisk it to avoid lumps. It's been around for ages and should be available in the baking section in blue shaker top paper canister.
