I have a question about the recipe "Baker's Sign Soft Pretzels" from Nicholas. What is barley malt syrup and where do you find it?
It's a sweetener made from barley grains. You can sub molasses, or look for it at a health food store.
If you use molasses, get 'light.'
You may also be able to find it at a home brewing supply source -- look for a local shop.
If you have a Whole Foods within reach they carry the Eden Organic label. Good for bagels too.
I was able to order it from amazon.com and had it in 2 days.
