Here's my favorite basic pancake. It comes from Diet for a Small Planet, labelled Wheat-Soy Waffles. I've been using it for over 35 years!
Combine 1 cup whole wheat flour, 1 tsp salt, 1/4 cup soy flour (or cornmeal, or more wheat), 2 tsp baking powder. Mix separately, 2 eggs, 1 1/2 cup milk, 3 Tb oil or melted butter (I skip it), 2 Tb honey (or sugar, or agave). Combine wet and dry ingredients -- don't overbeat.
Makes 5 waffles -- cook on a hot waffle iron. Or make pancakes in a hot oiled pan -- I like small ones, dipped out by the tablespoon. Turn when bubbles form, let the bottom brown, but don't cook too dry. Try them with blueberries or sliced banana. If you want to make them with buttermilk, add 1 tsp baking soda.
