Looking for a Spanish Tapas, Garlic Spread recipe
Years ago, when I was living in Salamanca Spain, I use to visit a local bar that served the best Tapas. They had one that was a small skewer of roasted pork served with a slice of bread. On top of the bread they had a spread that was bright green & very garlicky. We would "dip" our pork pieces into it & it was wonderful. The spread would melt so I'm thinking it was some kind of butter spread. That's about all I can tell you about it but I'm hoping someone knows what it might be.

3 cloves garlic
Salt
1 egg
1/2 lemon
250ml/8fl oz sunflower oil or other flavourless oil
1/2 bunch parsley leaves
Few drops green food colouring
First in a mortar and pestle grind the parsley leaves to form somewhat like a paste. Leave aside and make the mayonnaise
Crush garlic with a little salt. Add the egg and lemon juice and whisk lightly.
Then whisking constantly slowly add the oil in a thin and steady stream. This will cause an emulsion and it will become mayonnaise.
The grab the parsley and mix into it one spoon of the mayonnaise, the add this parsley mixture to the rest of the mayonnaise. Stir in a few drops of green food colouring. Taste and adjust salt. Refrigerate till needed.
It's served with meat, fish, cold meats and veggies

3 cloves garlic
1 egg
250ml / 8 fl oz sunflower oil
Juice 1/2 lemon
Salt
1/2 bunch parsley leaves

Crush garlic with a little salt to a paste, transfer to a bowl add egg and lemon, whisk lightly then gradually whisk oil in a thin stream to create an emulsion. Pound the parsley separately in a mortar and pestle and add 1 tablespoon of the mayonnaise. Stir well then stir parsley mixture with the rest of mayo. Add few drops of food colouring. Season to taste with salt. Refrigerate until needed. Enjoy
Also can be made in blender or can adjust using good quality store bought mayonnaise.
