A question about a recipe: Roasted Pork Belly

I have a question about step 4 on the recipe "Roasted Pork Belly" from monkeymom. It says:

"Roll pork belly into a cylinder so that the skin is on the outside and the meat is all tucked inside. Tie the cylinder with the kitchen string in 3 places along the length of the cylinder."

I can only guess what the question is (and it's not my own recipe) but when cooking pork belly you do want exposed skin to crisp, with melting into the pig meat. And that crispy skin is damn delicious.
