I make a marinade with 5 TBS. soy sauce, 2 TBS. sesame oil, 2 tsp. sugar, ground pepper, 4 chopped scallions, 1 TBS. chopped garlic, and 1 TBS. chopped fresh ginger, and a big splash of red wine.

Generally 1/4 to 1/2 as much brown suger as soy sauce, depending on how sweet you want it to be. Also, if I am going to be basting with the marinade, I'll usually go with the lower amount of sugar.
