Does anybody have a great vegetarian stuffing recipe?

I published a vegetarian recipe for Chestnut Stuffing with Caramelized Onions, Apples, and Calvados that was a big hit last year.

On Top Chef a couple of years ago Carla did a vegan stuffing with roasted veggies. It was pretty tasty. The recipe is most likely still on the site bravotv.com.
