What can i substitute for baking soda?
Merrill is a co-founder of Food52.
There is no true substitute for baking soda. You can use baking powder which has baking soda in it, however you must use 3 times as much baking powder than baking soda called for.
In one recipe that called for baking soda when I was fresh out of it, as well as baking powder, I just added an egg instead.
