Artichokes- I am making them in two days. Should they be refrigerated or leave them out at room temp.?

You can keep raw artichokes in a cool, dry place for a couple of days, or in the fridge. Don't keep them anywhere warm or damp.

Do you know how to turn an artichoke? Take out the outer tougher leaves, trim the stems, and keep them weighted under plates, or keep them covered. They will turn brown, so keep them in water with a couple of lemons.
