Poached cornish hen, braised pig trotters in nom yu with river potatoes and yuba, wintermelon soup, stir-fried glass noodles, some sort of stir-fried veg, and maybe fried sesame balls or steamed sponge cake.

BBQ pork slices with hot mustard and ketchup dip.
Whole rock cod (head and tail) with black bean sauce and carrot circles (symbolic of start and end of life, and "gold" coins.
Prawns in tomato sauce and onion slices (red is lucky color)
Chow mein noodles (not long-life as guests have difficulty with them and our lives are already pretty long) with chopped veg.
Steamed rice topped with (not mixed in) three kinds of chopped mushroom.
Sliced beef with gai lan and garlic slivers
Egg custard cups.
Tea and tsingtao.

Chairman Mao's favorite Hunan dish; red braised pork. I incorporate some Korean spices into it. As I'm cooking for about 25 people I also have to have a meatless course, likely to be a noodle soup of some kind.
