Living abroad, now idea what a Biscoff cookie is, any idea of UK or Irish substitutes?

So funny, we originally discovered and fell in love with Biscoff while traveling in Ireland. 😊 I’m sure you’ll find them there. They are called “Lotus.” They are delicious little, crisp cookies, they even have some flavors of ice cream. Excited for you to try the cheesecake, my guests always say it’s the best they’ve ever had and then they asked for the recipe.

yes, they arrived in Ireland eventually! I've seen the ice cream too. We lived in Belgium in the early 90s and knew them as speculoos (lots of brand names make them). Such a great idea for a pie or cake crust!

Janie, I believe they are actually European in origin, though I don't know about the trademark itself. Have you seen Lotus cookies/biscuits? They are oblong-ish (rectangualr with rounded edges) and the packaging is white with red. They are crispy and have a very pleasant cinnamon flavor, medium brown in color. I am sure you will be able to find them at any well stocked European market. Hope this helps.
