quinoa

I have a bunch of left over quinoa. Has anyone ever made "fried rice" out of it? Would it work? Recipes?

I often "stir fry" cold cooked quinoa and mix it into greens. The quinoa gets nutty and crunchy, it's delicious!

On our last trip to London we loved Ottolenghi restaurants. He is an Israely chef, Italian family, and giving to middle east-mediterranean cuisine a leap up in taste and has a modern style. I wish I had more words for this.

The recipe book is great but too much toward the graphics and less on really making the recipes happen....

Here is the quinoa salad recipe
Adapted after making it. It's a reinterpretation of cous cous (tabule) using quinoa.

100gr quinoa
300gr gread cubes
4 ripen small tomatoes
1/2 cucumber
1/2 red onion thin sliced
1 avocado
2 teaspoon mint (fresh)
2 teaspoon of parsely
4 teaspoon of coriander (alternative basil if n/a)
1 garlic clove
salt pepper olive oil
1 teaspoon of lemon juice (alternative vinager white)

Quite simple salad, cook the quinoa, drain and let it cool. Toss all ingredients together.

The secret of Ottolenghi is a perfect combination of ingredients.

Whenever we cook this and other recipes of Ottolenghi (toook us a while to get every detail straightened) it is always a succes!

This is not exactly a stir fry, but similar in taste and works out very well with leftover quinoa.

I often take cooked quinoa, add it to some stir-fried vegetables (clean out the bin selection), and stir it around with a premade or just made sauce. It's (almost) always delicious. If you have a fried rice recipe, you could use that, with the quinoa subbing for the cooked rice. Here's a recipe from a site I like -- http://www.cookingquinoa.net/stirfryrecipes. It should work well. But I've used mine to make a Tabouli salad.
You needs lots of chopped fresh parsley, and mix with the quinoa.
Add chopped tomatoes (winter hot house cherry tomatoes work fine). Other options are some green onion, or red onions, chopped fine and crumbled feta cheese. Dress with a lemon/olive oil, salt/pepper, oragano dressing and chill.
Quinoa keeps several days cooked in the 'fridge. And turning into tabbouil will extend the life. Serve with hummus and pita bread and grilled Greek chicken bits. (again optional).
