I did a whole series on "quickles" where I quick pickled five different vegetables (my favorite was pickled pineapple). The best way to do a quick pickle is to make a brine (any kind of vinegar you like, salt, sugar, and spices or herbs). Heat it up to dissolve the salt and sugar, then pour it over your very thinly sliced vegetables (use a mandoline if you have one) in a jar. Once your brine has cooled, your vegetable will be pickled.
