I have a 30 pound Turkey (feeding 15) and it's browning faster than I think it should. I've covered it in Aluminum Foil and lowered the temperature, can I do anything else to slow down the browning?

You may want to take the foil off for the last 30 minutes of cooking, to crisp up the skin. I can't think of anything other than foil tenting though.
