Can the muffins hang out after being griddled before they go in the oven? Do you wait until they've all been cooked on the stovetop? Just confused...

Yes, they can. Griddling is for color and initial rise. The baking is to insure that the dough is cooked through. It's difficult to cook the muffins entirely on the griddle without burning them. That's why they finish in the oven.
