Is the yeast amount really accurate? I only have instant yeast, what would be the equivalent of instant yeast for this recipe?

Monica, this formula always works for me. I also meant to write that 1 tbsp = 3 tsp, so the 2 1/3 tbsp active yeast = 7 tsp. 40% of 7 tsp is about 2 3/4 tsp.

Use 2 3/4 tsp instant. Active = 40% instant. Some say 33 to 40% but i use 40%.
