mince garlic sauté until fragrant add white wine spinach salt and pepper to taste set aside, caramelize onion, crumble goat cheese
salt and pepper chicken to taste, lay flat add spinach onion goat cheese. roll chicken and secure with picks. a parmesan crust would be nice as well, for arugula , grate or julienne carrot halve cherry tomato, toss with olive oil ad a little salt and pepper, feel free to send a message with any other questions

I had nothing in the house the other day but some sirloin strips and spinach and I made a peanut sauce and served the beef and wilted spinach with rice and the sauce. It will go into rotation. I still have leftover sauce and I'm going to try it with chicken and green beans next. Maybe you can season the chicken lightly with curry powder first.

1/2 cup peanut butter
2 Tbsp soy sauce
1 tsp brown sugar
1 tsp rice vinegar
1/3 cup water
Add to garlic and blend. Let sit a bit for flavors to develop
