I have been crazy for these caramelized spiced carrots which are great with bitter greens and chicken : http://food52.com/recipes/22118-caramelized-carrots-with-herbed-goat-cheese-snow. You can do plain goat cheese in place of the snow.

What about something like chicken cordon bleu? Or some type of stuffed chicken fillets with other added ingredients.

Perhaps incorporate those ingredients with orzo and make it a salad with a bright vinaigrette..

I had nothing in the house the other day but some sirloin strips and spinach and I made a peanut sauce and served the beef and wilted spinach with rice and the sauce. It will go into rotation. I still have leftover sauce and I'm going to try it with chicken and green beans next. Maybe you can season the chicken lightly with curry powder first.

1 clove garlic - place in a blender and buzz until minced
1/2 cup peanut butter
2 Tbsp soy sauce
1 tsp brown sugar
1 tsp rice vinegar
1/3 cup water
Add to garlic and blend. Let sit a bit for flavors to develop
