All of the other listed answers are excellent. For applesauce replacement I like taking fresh pineapple and running it through a food processor. I would say go to the store and see what fruits look the best and are locally sourced. Fresh

For what purpose, what are you making? You can use peach or apricot puree, banana puree, pureed prune, or melted butter or oil which the puree is likely there to replace. Yogurt or sour cream might work well too.
