You stack the leaves and roll them up like a cigar and then slice the roll very thinly.

Chiffonade is a type of cut. Usually used for leafy veg(lettuce, basil/herbs..) you pile a few leaves on top of each other and slice as thin as you can. Thinly sliced in long strips. Thats chiffonade. Works best with a very sharp knife.

It's a way of cutting basil into thin ribbons. Pile a couple of basil leaves on top of one another ans then roll. Slice thin ribbons across the leaves. That's a chiffonade

Of course!! I remember now! Thanks! I thought I had to get out the mixer and some egg whites for a minute!
