Red lentils are one of the faster-cooking lentils, requiring only about 30 minutes of simmering and no soaking time. With all dry lentils you will want to start by washing them and picking through them for rocks or other debris. It takes about two cups of water for every one cup of split lentils. Bring to a gentle boil and cook for 20-30 minutes. Keep an eye on the water level and add more if necessary. Add salt as necessary at the end. Split lentils will about double in yield after cooking, so one cup of dry red lentils will yield two cups of cooked lentils.
