One Bite Banan Cookies. Can I make batter ahead of time and keep in fridge until ready for baking?

Thank You Lindsay-Jean. I went ahead and did it anyhow. I baked a couple of these little babies as soon as the I had mixed the dough in order to test them; some with salt and some with pecan and some plain. I liked the plain the best and decided I would serve them warm with the caramel flan I had made. so I stuck them in the fridge and stuck them in the oven just as I was about to serve the second course.
They came out great. If I had made twice as many they would have all been eaten. People liked the warm cookie thing. Big success.

Although you can with a lot of cookie doughs, I wouldn't with this one. You'd lose the impact of the baking soda, and I think you'd get unsatisfactory results.
