I want to make crispy shallots to top my green bean casserole. Can I make them ahead of time or will they get soft by tomorrow?

If you sprinkle them with a little sugar first, they will crystalize and stay crispy.

They'll get soft! That's one thing I'd reserve for tomorrow.
