I would always store it in the refrigerator. Plus, I've found that if I don't cover the surface with a piece of plastic wrap it kind of dries out and forms a slight skin.

As for how long will it last? I don't have a definitive answer. But, I have had mine around the fridge for 3-4 days, and haven't noticed any flavor issues.
