Kate - I probably would have suggested freezing them before the icing. Why not test one cookie in the freezer and check it in a couple of hours to see if it changes the consistency of the frosting? Good luck to you!

Totally!! Do it all the time. Royal icing should do very well. The only issue is if your icing didn't fully harden -- then just be super careful in how you stack/store them so that one doesn't smudge or stick to the one below.
