Put out the dough with a wide selection of ingredients and let them make their own. Simple can be the usual pepperoni, "candy" can be pineapple and ham, complex can be pancetta and onion, or get exotic with thai chicken and bean sprouts.
My personal indulgence is loads of gorganzola with anchovy and carmalized onion. Of course, with a decent red - off limits to teens.
Do you mean recipes that would be challenging for a teenager to MAKE or challenging for a teenager to EAT (as in expanding their taste horizons)? Either way, I have found that Lucinda Quinn Scala's cookbook Mad Hungry contains recipes that could do both. Short ribs, various seafoods and pastas, unthreatening but interesting veggies, desserts. All basically classic and hearty recipes.
How about a classic eggplant parm. There are many steps but each is relatively easy. Here's a good recipe
