A question about a recipe: Spiced Roast Chicken with Za'atar Yoghurt

I have a question about the recipe "Spiced Roast Chicken with Za'atar Yoghurt" from BurntCream. Which type of za'atar is recommended? I have one that is sesame, sumac with toasted cumin and coriander with just a hint of anise and one that is more herbaceous with sesame, sumac and thyme.
