BTW, if you are looking for vegan marshmallows, you may not have to make them at home. Kosher brands are parve (no dairy, no meat) and often vegan. Look in Jewish stores or kosher sections of regular groceries, especially in the few weeks before Passover (when selection is best).

This looks like a good recipe. I haven't made this, but she's got pictures of each step which makes me pretty sure that it works.
