I take a jar of your favorite salsa, mixed with canned black beans and heat in a fry pan. then, I make indentations and crack eggs into them. Put a lid on it and your eggs will poach in the salsa. Serve on corn tortillas with a sprinkle of cheese and cilantro and everyone will love you

We just did piles of strata for a birthday brunch and it is easy, forgiving, made ahead. My go to savory breakfast. Though I am more and more appreciating the congee style porridge with soft egg and bits of protein as well.
