A question about a recipe: Caramelized Pork Bánh Mì

I have a question about the recipe "Caramelized Pork Bánh Mì" from monkeymom. I love this recipe and want to make it for a friend that doesn't eat pork. Would anyone suggest just using beef tenderloin or would another cut be better?

I would adapt the recipe for skirt or flank steak thinly sliced or chicken thighs or breasts.
