Does anyone have a recipe for a dairy free, gluten free, mostly sugar free protein bar?

This is an adaptation of a traditional South Indian sweet, but I replace most of the white sugar sources with natural sugars such as Palm or coconut sugar. Its dairy & gluten free

put dates and nuts in a food process, add other dried fruit and spices if desired

Thanks for these suggestions. I didn't want to make my question to complicated but was hoping for a recipe that used vegan protein powder. I found this one: http://www.runningwithspoons.com/2014/01/07/soft-and-chewy-protein-granola-bars/#comment-355141

I was going to replace choc chips with cacao nibs and use unsweetened coconut milk . Still trying to figure out what to use instead of honey. I want to get more protein in each serving so will up the protein powder and add an egg. Hope to make them today.

Talia, those look great. I happen to have dried dates and raw cashews that I'll use instead of almonds and the called for sugars.

If you google Paleo protein bar recipe, you will find a ton. Nom Nom Paleo, Mark Sisson, Diane Sanfilippo and Melissa Joulwan all are great resources for such recipes.
