Granita Texture

I have tried to make strawberry granita a couple times and it comes out more like sorbet? It's really tasty, but I've been craving granita! I've been making it with a simple syrup, although I've seen some recipes that ask for no water at all. I would think that the water would make it more flaky? Maybe I need to just try the granulated sugar instead? Help!

Yes, I would not use a simple syrup. Do a search for a granita recipe on this site. There are a lot of great recipes. :)
