From my Girl Scout days- combine your favorite veg with a little oil in foil packets and cook on the fire.

My dad always makes a terrific vegetable soup using a Coleman cook stove when we go camping, but I'm sure that you could easily replicate it using a Dutch oven and open campfire. Here is what you need: two bottles of V8 vegetable juice (one spicy and one regular), various vegetables (best combo: green beans, red potatoes, mushrooms, celery, carrots, and corn on the cob), and a can of black eyed peas. Here is what you do: chop up all your veggies, put them in the pot, pour in enough juice to cover them, and add the whole can of black eyed peas. Let it simmer for about 45 minutes after coming to a boil, or until the vegetables are as tender as you like them. Enjoy!

If you're car camping or only packing in a short ways (i.e. don't mind bringing a large pan) paella was traditionally made over open fires, and is delicious made that way. You will need something to hold your pan a bit above the coals.

I so agree. If someone asked me what the best meal in my life was, I would say it was the Paella that my friend Barbie cooked up at Elk Lake over an open fire. Amazeballs!! She and her husband lived in Barcelona for 3 years, so she really nailed it. Thanks for the memory. :0)

I missed my opportunity to play Indian Fire Walking Maiden this year but you can do it for me. Soak corn on the cob in water for a few minutes until it has soaked up some water. Place around the edges of the campfire and turn regularly until done. Make sure you have a heavy glove or long tongs to protect you from the heat. It is ok for the shucks to be slightly burned.

I also love potatoes, onions and butter wrapped in foil. While I usually do this in a big pack on my home grill, they can be done in small packs placed on the coals on the sides. I usually double wrap them.

For on the tripod grill I would do burgers, hot dogs or bratwurst for a group or steaks for only a couple.

My dad always made us what he delightfully called "tripper's sh*t." Cut up hot dogs, veggies, whatever else is on hand, etc etc, add a bit of stock or water (I like tomato sauce here too), and simmer over a fire in a covered pot until it's hot. Sprinkle with some cheese to serve, and you're good to go. Also, I never get tired of the ole' banana sliced open with chocolate stuffed in the middle, wrapped in tin foil, and roasted. It's delicious with pretty much any fruit. Enjoy!

I remember an old basic...pack in foil a beef burger patty with slices of potato, carrot, onion on either side, cook in embers, serve as is or on bun. Great flavor, great for when you don't have a grill. Can vary with other root vegetables, leek, ramps, herbs, other ground meat.

Forgot about breakfast. 2 easy ideas for pancakes & biscuits. Make up dry mix before you leave home, using milk powder equivalent to milk in recipe, then add water at campsite, and fry. For biscuits, bake/fry in pan or roast/bake wrapped around green stick. Toppings (syrup, fruit, flavored sugar, cheese) to taste & how much weight you can carry.
